Spicy BBQ-Stew

2-SWEET GREEN PEPPERS, seeded and coarsely chopped
1 1/2-CUPS FROZEN CORN, thawed
1-18OZ. CONTAINER OF PREPARED BBQ SHREDDED PORK
1-15OZ. CAN OF SWEET POTATOES IN SYRUP
1/4-CUP SHREDDED CHEDDAR CHEESE

In large pot, combine peppers,corn,shredded pork, and
one cup of water. Heat, covered, over medium high for
7 mins., stirring occasionally, until peppers are
crisp tender.
Meanwhile, drain sweet potatoes and discard syrup. If
whole, cut into cubes. Stir into stew and cook another
2-3 mins. Serve sprinkled with cheese.
I try to accompany this with salad and garlic sticks.
